Beef Fried Rice

Ingredients

600g beef fillet, cubed
2 onions, peeled
2 cloves of garlic
1 tsp ground pepper
4 tbsp corn or vegetable oil
3 ¼ litre of water
200g diced tomato
2 chillies
2 tbsp tomato paste
½ litre of water
300g rice
2 Renzo stock cubes

    Instructions

    1. Place in a saucepan two tablespoons of oil, the meat and the onions. Add the chopped garlic and pepper. Pour in ¾ litre water and the 2 Renzo Jumbo cubes. Bring to the boil, cover and cook on a low heat for approx. 1½ hours.
    2. Strain the meat and discard the onion. Heat a separate saucepan with oil. Sauté the meat for 5 minutes until golden and remove.
    3. Add to the oil the tomato and chopped chilli and reheat for a few minutes. Add the tomato paste, ½ litre of juice from the meat and another ½ litre of water. Bring to the boil. Add the meat and the rice, cover and cook for 20 minutes. Leave to rest. Serve with chillis (optional).
