Chicken Tandoori

Ingredients

1½ kgchicken
1 cupplain yogurt (strained)
5–6 tbsplemon juice
4–6 tbspoil or melted butter

Instructions

  1. Mix lemon juice, food color (if using), and 2 tablespoons of oil or butter.
  2. Apply the mixture to chicken pieces and prick with a fork all over to absorb the marinade. Let it sit for 30 minutes.
  3. Apply strained yogurt over the chicken and marinate for an additional 3 hours or more in the refrigerator.
  4. Preheat oven to 350°F (180°C). Arrange the chicken pieces on a baking tray, discarding the excess marinade.
  5. Bake for 25 minutes, then brush with the remaining oil or butter.
  6. Place under the grill on high heat for a few minutes until the chicken is lightly browned, or barbecue over open flame until cooked through and charred lightly.
